Ingredients
- 1 tbsp blanched almonds (skins removed)
- 1 cup milk
- 2 1/2 tbsp sugar
- 1/8 cinnamon stick
- 1 1/3 egg yolks
- 1 1/2 oz premium rum
Instructions
- Process almonds into a paste in a food processor.
- In a saucepan, combine milk, sugar, and cinnamon. Heat without boiling, then let stand for 30 minutes.
- Whisk almond paste into the milk mixture.
- Beat egg yolks until creamy, then slowly add the milk mixture, stirring continuously until fully combined.
- Cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 8 to 10 minutes.
- Allow the mixture to cool completely, then add rum and stir before serving.
