Ingredients

  • 1 tbsp blanched almonds (skins removed)
  • 1 cup milk
  • 2 1/2 tbsp sugar
  • 1/8 cinnamon stick
  • 1 1/3 egg yolks
  • 1 1/2 oz premium rum

Instructions

  1. Process almonds into a paste in a food processor.
  2. In a saucepan, combine milk, sugar, and cinnamon. Heat without boiling, then let stand for 30 minutes.
  3. Whisk almond paste into the milk mixture.
  4. Beat egg yolks until creamy, then slowly add the milk mixture, stirring continuously until fully combined.
  5. Cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 8 to 10 minutes.
  6. Allow the mixture to cool completely, then add rum and stir before serving.
