Ingredients

  • 2 oz Aperol
  • 1 oz juice from about 1 lemon
  • 0.50 oz St. Martinique Cane Sugar Syrup
  • 1 egg white
  • Seltzer
  • Grapefruit twist

Instructions

  1. In a cocktail shaker, combine Aperol, lemon juice, cane syrup, and egg white.
  2. Shake vigorously for 15 seconds to emulsify the egg white.
  3. Add ice to the shaker and shake until very cold, about 15 seconds.
  4. Strain the mixture into a glass.
  5. Top the glass with seltzer.
  6. Garnish with a twist of grapefruit.
