Ingredients

  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 3-inch long piece fresh ginger, peeled, thinly sliced
  • 1 lemon, peeled with vegetable peeler, juiced
  • Pinch of sea salt
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/2 cup fresh blueberries
  • 3 oz dark rum
  • 1 cup ice cubes
  • Handful of fresh mint leaves

Instructions

  1. In a medium saucepan, combine water, sugar, ginger, lemon peel and juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set aside to cool.
  2. Strain the syrup into a bowl and discard the solids. The syrup can be refrigerated for up to 1 week.
  3. In a blender, combine the berries, rum, and 1 cup of ginger syrup. Blend until well combined.
  4. Fill a glass halfway with ice, add the berry mixture and mint, and stir well.
  5. Pour into a highball glass and serve immediately.
