Ingredients
- 1/2 cup water
- 1/4 cup granulated sugar
- 3-inch long piece fresh ginger, peeled, thinly sliced
- 1 lemon, peeled with vegetable peeler, juiced
- Pinch of sea salt
- 1/2 cup fresh raspberries
- 1/2 cup fresh blackberries
- 1/2 cup fresh blueberries
- 3 oz dark rum
- 1 cup ice cubes
- Handful of fresh mint leaves
Instructions
- In a medium saucepan, combine water, sugar, ginger, lemon peel and juice, and salt. Bring to a boil, then simmer for 5 minutes until the syrup thickens slightly and is infused with ginger and lemon. Set aside to cool.
- Strain the syrup into a bowl and discard the solids. The syrup can be refrigerated for up to 1 week.
- In a blender, combine the berries, rum, and 1 cup of ginger syrup. Blend until well combined.
- Fill a glass halfway with ice, add the berry mixture and mint, and stir well.
- Pour into a highball glass and serve immediately.
