Ingredients

  • 1/2 pound watermelon chunks
  • Juice of 1 1/4 lemons
  • 1 1/2 sprigs fresh mint
  • 6 ounces ice-cold water
  • 1 tablespoon sugar (or to taste)

Instructions

  1. Line a sheet pan with parchment paper or wax paper and set aside.
  2. Remove the rind from the watermelon and discard. Cut the watermelon fruit into one or two-inch chunks and place onto the prepared sheet pan in a single layer, leaving space between each piece of fruit.
  3. Transfer the sheet pan to the freezer and allow the watermelon to freeze for at least 30 minutes.
  4. Juice the lemons and remove the mint leaves from the stems.
  5. Add the frozen watermelon chunks, lemon juice, fresh mint leaves, ice-cold water, and sugar to a blender.
  6. Pulse until the ingredients are uniform and smooth, creating a thick and frosty mixture resembling a slushy.
  7. Pour the frozen watermelon mint lemonade into a glass and serve immediately with a straw and more fresh mint if desired.
