Ingredients

  • 1-2 tablespoons granulated sugar
  • 8 fresh mint leaves
  • Juice of 1 lime
  • 1 ounce white rum (Bacardi)
  • 1/2 ounce coconut rum (Malibu)
  • 1/4 cup coconut milk
  • 3/4 cup ice cubes
  • Club soda
  • Fresh mint, for garnish
  • Fresh pomegranate arils, for garnish

Instructions

  1. In a cocktail shaker or sturdy glass, combine sugar with fresh mint leaves and lime juice.
  2. Use a muddler to crush the mint leaves and release their oils.
  3. Fill the shaker/glass with ice, then pour in the white rum and coconut milk. Cover and shake well, or stir if using a glass.
  4. Pour the mixture into a cocktail glass and top with club soda.
  5. Stir, taste, and adjust sweetness by adding more sugar if desired.
  6. Garnish with fresh mint leaves and pomegranate arils or cranberries.
