Ingredients

  • 1 large egg (separated into yolk and white)
  • 2 tablespoons granulated sugar
  • 1/3 cup whole milk
  • 2 tablespoons heavy whipping cream
  • 1/8 to 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 to 1 1/2 tablespoons bourbon (optional)

Instructions

  1. Separate the egg yolk from the white. Place the egg yolk in a mixing bowl and set the egg white aside.
  2. Whisk the egg yolk and sugar together until the mixture is pale yellow and fluffy. Set aside.
  3. In a saucepan, heat the milk, whipping cream, and nutmeg until just before boiling. Remove from heat.
  4. Spoon a ladle full of the hot milk mixture and whisk it into the egg mixture to temper the eggs. Continue adding hot milk to the egg mixture and then slowly pour the egg mixture back into the saucepan, whisking as you do so.
  5. Heat the mixture over medium heat, stirring constantly, until it thickens. Do not let it boil. It should not be heated above 160°F.
  6. Remove from heat and stir in the vanilla extract and bourbon.
  7. Cover with plastic wrap and refrigerate for at least 1 hour.
  8. Serve with a sprinkle of freshly grated nutmeg.
