Ingredients

  • 1 large egg (separated)
  • 2 teaspoons of superfine sugar, divided
  • 1 oz of heavy cream
  • 1/2 teaspoon of pure almond extract
  • 1/2 teaspoon of pure vanilla extract
  • 1 1/2 oz of aged rum
  • Garnish: Grated cinnamon
  • Garnish: Grated nutmeg

Instructions

  1. Begin by separating the egg into two separate bowls.
  2. Use a hand mixer to beat the egg yolk until it becomes creamy.
  3. In another bowl, beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Gently fold the beaten egg white into the creamy egg yolk using a spoon.
  5. In a separate bowl, beat the heavy cream with the vanilla and almond extracts, along with the remaining 1 teaspoon of sugar, until stiff peaks form.
  6. Add the aged rum to the cream mixture and stir gently.
  7. Slowly fold the rum-infused cream into the egg mixture.
  8. Serve the eggnog immediately over ice, if desired, in a punch or martini glass.
