Ingredients
- 1 large egg yolk
- 2 tablespoons granulated sugar
- 1 cup whole milk
- 1 cinnamon stick
- 2-3 whole cloves
- 1/3 cup half & half
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon rum extract
- A pinch of ground nutmeg
Instructions
- In a large mixing bowl with a pouring spout, whisk the egg yolk and sugar until light in color.
- In a medium saucepan over medium heat, heat the milk with the cinnamon stick and whole cloves until it is barely boiling.
- Slowly whisk 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Continue to whisk in 1/2-cup increments until about half of the milk has been added.
- Whisk the tempered egg mixture back into the saucepan and cook over medium heat for 3 minutes, whisking constantly.
- Strain the mixture from the saucepan into a glass jug, removing the cinnamon stick and whole cloves.
- Allow the mixture to cool for about an hour, then stir in the half & half, vanilla extract, rum extract, and nutmeg.
- Chill in the refrigerator and serve in glasses with a sprinkle of nutmeg on top.
