Ingredients

  • 2 large egg yolks
  • 1 tablespoon sugar
  • 1 cup whole milk
  • Pinch of coarse salt
  • 1/4 cup heavy cream
  • 1 tablespoon bourbon
  • 1 tablespoon dark rum
  • 1/2 tablespoon cognac
  • Freshly whipped cream (unsweetened), for serving
  • Freshly grated nutmeg, for serving

Instructions

  1. In a medium heatproof bowl, whisk together egg yolks and sugar until the mixture turns pale yellow and thick.
  2. Heat the milk and salt in a saucepan until it reaches a bare simmer. Slowly pour the hot milk mixture into the yolk mixture while whisking constantly.
  3. Transfer the yolk mixture back into the saucepan and cook over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  4. Strain the mixture into a large bowl, discard any solids, and let it cool for about 20 minutes. Then, add the cream, bourbon, rum, and cognac, and refrigerate overnight.
  5. In a heatproof mixer bowl set over simmering water, whisk the remaining sugar and egg whites until the sugar is dissolved and the mixture is warm.
  6. Remove from heat, beat the mixture until stiff peaks form, and then fold it into the eggnog.
  7. Pour into glasses, top with a dollop of whipped cream, and sprinkle with nutmeg before serving.
