Ingredients

  • 1 egg, separated
  • 2 tablespoons sugar
  • 1/2 cup milk
  • 3/4 cup thickened cream
  • 2 tablespoons Bourbon
  • 4 teaspoons dark rum
  • 3 teaspoons brandy
  • Pinch of mixed spice
  • Finely grated nutmeg, for serving

Instructions

  1. In a bowl, whisk the egg yolks and sugar until they become pale and thick, which should take about 4-6 minutes.
  2. Add the milk and 1/2 cup of the cream to the yolk mixture, and whisk until well combined.
  3. Stir in the Bourbon, rum, brandy, and mixed spice, and whisk until fully combined.
  4. Refrigerate the mixture for at least 5 hours or overnight to allow the flavors to develop.
  5. In an electric mixer, whisk the egg whites until stiff peaks form, then gently fold them into the milk mixture.
  6. In the same electric mixer, whisk the remaining 1/4 cup of cream until soft peaks form, then fold it into the egg and milk mixture.
  7. Serve the cocktail in glasses, sprinkled with finely grated nutmeg.
