Ingredients

  • 2 Tbsp. plus 2/3 tsp. kosher salt
  • 2 oz. fresh lemon juice
  • 1 oz. ginger syrup
  • 1 tsp. apple cider vinegar
  • 1/2 oz. aquafaba
  • 1 thin lemon slice

Instructions

  1. Whisk the kosher salt into 2/3 cup room temperature water until fully combined to create a salt tincture. Transfer to a small bottle and set aside.
  2. Fill a cocktail shaker with ice.
  3. Add the lemon juice, ginger syrup, apple cider vinegar, aquafaba, and 6 drops of the reserved salt tincture to the shaker.
  4. Shake vigorously until the shaker is very cold and the liquid is frothy, about 30 seconds.
  5. Strain the mixture into a coupe glass.
  6. Garnish with a thin lemon slice.
  7. Serve immediately and enjoy!
