Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 2 sprigs fresh rosemary
  • 1 strip of lemon zest (about 1-inch wide)
  • 1 very ripe pear
  • Dash of lemon juice
  • 1 oz pear vodka
  • 1 oz unflavored vodka
  • 2 tablespoons pear puree
  • 2 tablespoons rosemary syrup
  • 2 tablespoons prosecco or sparkling wine
  • Ice
  • Fresh rosemary sprig for garnish

Instructions

  1. Prepare the rosemary simple syrup by combining sugar and water in a saucepan. Heat and stir until the sugar dissolves, then add the rosemary and allow it to steep. Once cooled, remove the rosemary.
  2. Make the pear puree by blending the ripe pear with a splash of lemon juice until smooth.
  3. In a cocktail shaker with ice, combine both vodkas, pear puree, and rosemary syrup. Shake well.
  4. Strain the mixture into a martini glass.
  5. Top with prosecco to taste and garnish with a fresh rosemary sprig.
