Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 3/4 cup heavy whipping cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Separate the egg yolks and whites into separate bowls.
- Whisk the egg yolks with 3 tablespoons of sugar until pale.
- Warm the cream and milk in a saucepan over medium heat.
- Slowly whisk half of the cream mixture into the egg mixture, then combine it all in the saucepan.
- Cook the mixture over medium heat, stirring frequently, until it coats the back of a spoon.
- Strain the mixture into a bowl and let it cool.
- Whisk in the bourbon and Frangelico, then refrigerate until chilled.
- In a separate bowl, beat the egg whites with the remaining sugar until soft peaks form.
- Gently fold the egg white mixture into the chilled yolk-bourbon mixture.
- Refrigerate until chilled.
- Just before serving, stir the eggnog and sprinkle with freshly grated nutmeg.
