Ingredients

  • 2 oz demerara rum
  • 1 oz lime juice
  • 3/4 oz rich demerara sugar syrup (2:1)
  • Small handful of fresh mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs (for garnish)
  • Crushed ice

Instructions

  1. Make rich demerara sugar syrup by simmering 2 cups of demerara sugar in 1 cup of water until dissolved, then let it cool and refrigerate.
  2. In a cocktail shaker, muddle mint, lime juice, and rich demerara sugar syrup.
  3. Add demerara rum, give it a quick shake, and pour into a tall glass.
  4. Press mint into the bottom of the glass and fill it with crushed ice.
  5. Use a barspoon or swizzle stick to swizzle the drink until frost forms on the glass.
  6. Add 2-4 dashes of Angostura bitters and top with more ice.
  7. Garnish with a generous bouquet of mint.
  8. Sip and enjoy!
