Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup dried marigold flowers
  • Sea salt
  • 3-4 dried marigold flowers
  • 2 limes
  • 1/4 cup mezcal
  • 2 tablespoons marigold syrup (recipe below)

Instructions

  1. To make the marigold syrup, combine sugar and water in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Remove from heat, add flowers, cover, and let steep for at least 15 minutes, up to 2 hours.
  2. To make the margarita, pour about 1/4 cup salt on a shallow dish. Crumble 2 marigold flowers into the salt and rub them together.
  3. Cut a lime in half. Cut one lime half into thick slices. Rub a lime slice around the edge of a rocks glass, then dip the rim into the marigold salt and fill the glass with ice.
  4. Fill a shaker with ice, squeeze the remaining 3 lime wedges into the shaker, add mezcal and syrup. Cover and shake vigorously.
  5. Strain the mixture into the prepared glass and garnish with crumbled marigold flower and a lime wedge.
