Ingredients

  • Light corn syrup or honey (for rimming the glass)
  • Crushed candy canes or peppermint (for rimming the glass)
  • 1 1/2 cups crushed ice
  • 1/4 cup cream of coconut
  • 2 tablespoons pineapple juice
  • 2 tablespoons light rum
  • 2 tablespoons peppermint schnapps
  • 1 1/2 teaspoons grenadine

Instructions

  1. Rim the glass: Drizzle a thin layer of corn syrup or honey onto a plate. Place crushed candy canes on a separate plate and gently press the rim of the glass into the syrup, then into the crushed candy canes.
  2. Place crushed ice in the blender pitcher.
  3. Add cream of coconut, pineapple juice, rum, peppermint schnapps, and grenadine to the blender pitcher.
  4. Cover and blend until smooth.
  5. Adjust the consistency by adding more ice if desired.
  6. Pour the blended mixture into the prepared rimmed glass and enjoy!
