Ingredients

  • 1/2 cup fresh or frozen blueberries
  • 1 tbsp water
  • 1 tbsp sugar
  • 1/2 tbsp lemon juice
  • 3/4 cup white grape juice or apple juice
  • 2 oz amber rum
  • Club soda
  • Prosecco
  • Lemon slice and frozen berries for garnish

Instructions

  1. In a saucepan, gently simmer the blueberries for 5 minutes to release their juice. You can add a little water to hasten the process.
  2. In a separate pot, simmer the sugar and water for 4-5 minutes to create a simple syrup.
  3. Strain the juice from the berries and add it to a covered plastic container.
  4. Puree the strained berries thoroughly and add the puree to the container along with the simple syrup and the remaining ingredients.
  5. Stir well to combine, cover, and place the container in the freezer for about 6 hours.
  6. After 6 hours, break down the forming ice sheets into smaller crystals using an immersion blender or vigorous stirring.
  7. Return the container to the freezer and give it another stir after a few hours. Keep the slush covered in the freezer until ready to serve.
  8. When serving, stir the slush well and spoon 4 ounces into an 8-ounce glass. Add 2 or more ounces of club soda, stir, and serve. For an alternative presentation, serve the slush in martini glasses mixed with a splash of Prosecco and garnish with a lemon slice and frozen berries on top.
