Ingredients
- 1/2 cup fresh or frozen blueberries
- 1 tbsp water
- 1 tbsp sugar
- 1/2 tbsp lemon juice
- 3/4 cup white grape juice or apple juice
- 2 oz amber rum
- Club soda
- Prosecco
- Lemon slice and frozen berries for garnish
Instructions
- In a saucepan, gently simmer the blueberries for 5 minutes to release their juice. You can add a little water to hasten the process.
- In a separate pot, simmer the sugar and water for 4-5 minutes to create a simple syrup.
- Strain the juice from the berries and add it to a covered plastic container.
- Puree the strained berries thoroughly and add the puree to the container along with the simple syrup and the remaining ingredients.
- Stir well to combine, cover, and place the container in the freezer for about 6 hours.
- After 6 hours, break down the forming ice sheets into smaller crystals using an immersion blender or vigorous stirring.
- Return the container to the freezer and give it another stir after a few hours. Keep the slush covered in the freezer until ready to serve.
- When serving, stir the slush well and spoon 4 ounces into an 8-ounce glass. Add 2 or more ounces of club soda, stir, and serve. For an alternative presentation, serve the slush in martini glasses mixed with a splash of Prosecco and garnish with a lemon slice and frozen berries on top.
