Ingredients
- 0.85 oz freshly squeezed lime juice
- 1.70 oz white rum
- 0.50 oz mint syrup (see recipe below)
- Ice
- 3.40 oz sparkling water
- 1 peppermint candy cane
- 3.50 tbsp golden caster sugar
- 1/2 tsp peppermint extract
Instructions
- In a pan, heat the sugar and 3.4 fl oz of water over medium heat until the sugar dissolves.
- Turn off the heat and stir in the peppermint extract. Let the syrup cool completely.
- Pour the lime juice into a tall glass.
- Add the rum, 0.5 oz of the mint syrup, and a handful of ice. Stir well.
- Top up with the sparkling water and stir gently to combine.
- Garnish the cocktail with a peppermint candy cane.
