Ingredients

  • 2 cups rhubarb, sliced
  • 2 tablespoons coarsely chopped ginger
  • 1/4 cup roughly chopped fresh mint (optional)
  • 1 cup sugar
  • 1 cup water
  • A tiny dash of pink food coloring (if needed)
  • 1 oz lime juice (about 2 tablespoons)
  • 1/2 inch fresh ginger, sliced (about 2 teaspoons)
  • 4 fresh mint leaves (optional)
  • 3 oz vodka
  • 1 cup ginger beer
  • 1 oz ginger rhubarb syrup

Instructions

  1. To make the ginger rhubarb simple syrup, chop the rhubarb into smaller pieces and combine with the rest of the ingredients in a small saucepan.
  2. Boil the mixture for 10 minutes, then strain it into a clean bottle or jar. For a more intense flavor, allow the mixture to cool completely before straining.
  3. To make the Rhubarb Moscow Mule, in a glass or copper mug, squeeze lime juice and add the squeezed lime, fresh ginger, and mint leaves.
  4. Muddle the ingredients to release their juices, then fill the glass with ice and pour in the vodka, ginger beer, and ginger rhubarb simple syrup.
  5. Stir and garnish with lime, mint, and a stalk of rhubarb.
