Ingredients

  • 1/2 cup fresh rhubarb, chopped
  • 1 tbsp white sugar
  • 1 oz frozen orange juice concentrate, thawed
  • 1 oz frozen lemonade concentrate, thawed
  • 1 1/2 oz gin
  • 3/4 cup water
  • 5 oz lemon-lime flavored carbonated beverage, chilled

Instructions

  1. In a saucepan, combine the chopped rhubarb and water. Bring to a boil over medium-high heat and cook until the rhubarb is tender.
  2. Drain the cooked rhubarb and then mash or purée it in a blender until smooth.
  3. In a large bowl, mix together the rhubarb purée, sugar, orange juice concentrate, lemonade concentrate, and gin until well combined.
  4. Pour the mixture into a shallow container and place it in the freezer.
  5. Allow the mixture to freeze for several hours or until solid.
  6. Once frozen, use a spoon to scoop the mixture into a serving glass, filling about halfway.
  7. Top off the glass with the chilled lemon-lime soda and serve with a straw.
