Ingredients

  • 1 tablespoon blanched almonds (skins removed)
  • 1 cup milk
  • 1/4 cup sugar
  • 1/8 teaspoon ground cinnamon
  • 2 egg yolks
  • 2 tablespoons premium rum

Instructions

  1. In a food processor, process blanched almonds into a smooth paste.
  2. In a heavy-bottomed saucepan, simmer milk, sugar, and cinnamon until the sugar dissolves and the milk is heated through. Remove from heat and let it stand for 30 minutes.
  3. Whisk the almond paste into the milk mixture.
  4. In a separate bowl, beat the egg yolks until creamy, then slowly add the milk mixture, stirring continuously until fully incorporated.
  5. Return the pan to the stove and cook the mixture over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 8 to 10 minutes.
  6. Allow the Rompope Almond Delight to cool completely. Add rum and stir before serving.
