Ingredients
- 2 oz Gin
- 1/4 oz Lemon Juice
- 1/2 oz Rosemary Simple Syrup
- 1 Egg White
- Sparkling water, to top it off
- Rosemary sprig, for garnish
- 2 tbsp Sugar
- 2 tbsp Water
- 2 Sprigs of Rosemary
Instructions
- Prepare the rosemary simple syrup by combining sugar and water in a saucepan over medium heat until the sugar dissolves. Add in the rosemary and stir over medium-low heat for 5 minutes. Remove from heat and let the simple syrup steep for 10 minutes. Strain and store in a sealed container for up to 1 month.
- In a cocktail shaker, combine the gin, lemon juice, rosemary simple syrup, and egg white. Shake for 30 seconds until the egg white becomes foamy.
- Add ice to the shaker and shake for another 30 seconds.
- Fill a glass with ice cubes and pour in the cocktail mixture.
- Top it off with sparkling water and garnish with a sprig of rosemary.
