Ingredients

  • 2 oz Gin
  • 1/4 oz Lemon Juice
  • 1/2 oz Rosemary Simple Syrup
  • 1 Egg White
  • Sparkling water, to top it off
  • Rosemary sprig, for garnish
  • 2 tbsp Sugar
  • 2 tbsp Water
  • 2 Sprigs of Rosemary

Instructions

  1. Prepare the rosemary simple syrup by combining sugar and water in a saucepan over medium heat until the sugar dissolves. Add in the rosemary and stir over medium-low heat for 5 minutes. Remove from heat and let the simple syrup steep for 10 minutes. Strain and store in a sealed container for up to 1 month.
  2. In a cocktail shaker, combine the gin, lemon juice, rosemary simple syrup, and egg white. Shake for 30 seconds until the egg white becomes foamy.
  3. Add ice to the shaker and shake for another 30 seconds.
  4. Fill a glass with ice cubes and pour in the cocktail mixture.
  5. Top it off with sparkling water and garnish with a sprig of rosemary.
