Ingredients

  • 1 large egg (separated)
  • 2 teaspoons of superfine sugar (divided)
  • 1 oz heavy cream
  • 1/2 teaspoon of pure almond extract
  • 1/2 teaspoon of pure vanilla extract
  • 1 1/2 oz aged rum
  • Garnish: grated cinnamon
  • Garnish: grated nutmeg

Instructions

  1. Start by separating the egg into two bowls.
  2. Using a hand mixer, beat the egg yolk until it turns creamy.
  3. In a separate bowl, beat the egg white with 1 teaspoon of sugar until soft peaks form.
  4. Gently fold the egg white and yolk together using a spoon.
  5. In another bowl, beat the cream with the vanilla and almond extracts and the remaining 1 teaspoon of sugar until stiff peaks form. Then, gently stir in the rum.
  6. Slowly fold the cream into the egg mixture.
  7. Serve the eggnog immediately over ice, if desired, in a punch or martini glass.
