Ingredients

  • 1/4 cup water
  • 1/4 cup sugar
  • 2 tablespoons dried hibiscus flowers
  • 1 1/2 oz simple syrup
  • 2 oz Koloa Kauai Spice Rum
  • 1.50 oz White Cranberry Juice
  • 2-2.50 oz Soda Water
  • 1/2 tablespoon lime juice
  • 1/2 lime, sliced into thin rounds
  • A handful of mint leaves
  • Cranberries (frozen or fresh, for garnish)
  • Crushed ice

Instructions

  1. In a small saucepan, combine water, sugar, and hibiscus flowers over medium heat. Stir until sugar dissolves, then bring to a boil. Remove from heat and cool. Strain the syrup into a jar to remove the hibiscus leaves. Chill the syrup until ready to use.
  2. In a large collins glass, pour simple syrup and a few mint leaves. Gently muddle to bruise the mint leaves. Add crushed ice and a lime wheel on top of the ice. Layer more ice, mint leaves, and lime wheels until the glass is full.
  3. In a cocktail shaker with ice, combine spiced rum, white cranberry juice, and lime juice. Shake well, then pour into the prepared glass. Top with soda water.
  4. Garnish with a lime slice, a sprig of mint, and whole cranberries. Serve immediately.
