Ingredients

  • 1/4 cup espresso coffee (or strong instant coffee)
  • 1 tablespoon coffee liqueur
  • 1 Savoiardi biscuit (fine sponge finger), broken into pieces
  • 2 large egg whites
  • 1 cup mascarpone cheese
  • 1 tablespoon honey
  • 1 tablespoon marsala
  • 1 teaspoon good-quality cocoa powder

Instructions

  1. Prepare espresso coffee and allow it to cool, then mix in the coffee liqueur.
  2. Place the broken Savoiardi sponge finger pieces into a small martini glass and pour the cooled espresso mixture over them, ensuring the biscuits are soaked.
  3. Using an electric hand-held whisk, beat the egg whites until they form soft peaks, then set aside.
  4. In a separate bowl, combine the mascarpone cheese with honey and marsala, and beat until smooth.
  5. Gently fold the whipped egg whites into the mascarpone mixture.
  6. Spoon the mascarpone mixture over the soaked Savoiardi in each glass, creating a swirly peak at the top.
  7. Refrigerate the glasses for at least 20 minutes and up to 24 hours, then dust with cocoa just before serving.
