Ingredients
- 1/4 cup espresso coffee (or strong instant coffee)
- 1 tablespoon coffee liqueur
- 1 Savoiardi biscuit (fine sponge finger), broken into pieces
- 2 large egg whites
- 1 cup mascarpone cheese
- 1 tablespoon honey
- 1 tablespoon marsala
- 1 teaspoon good-quality cocoa powder
Instructions
- Prepare espresso coffee and allow it to cool, then mix in the coffee liqueur.
- Place the broken Savoiardi sponge finger pieces into a small martini glass and pour the cooled espresso mixture over them, ensuring the biscuits are soaked.
- Using an electric hand-held whisk, beat the egg whites until they form soft peaks, then set aside.
- In a separate bowl, combine the mascarpone cheese with honey and marsala, and beat until smooth.
- Gently fold the whipped egg whites into the mascarpone mixture.
