Ingredients
- 2 oz white rum
- 1/2 cup canned light coconut milk
- Juice of 1 lime
- 2 tbsp mint simple syrup
- 1 cup ice
- Handful of mint leaves, for garnish
- Toasted coconut flakes, if desired, for garnish
Instructions
- In a small saucepan, combine sugar, 1 cup water, and mint leaves. Bring to a boil, then let it cook for 10 minutes. Strain the mint and reserve the simple syrup.
- Once the mint simple syrup has cooled, add the rum, coconut milk, lime juice, reserved mint simple syrup, and ice to a high-powered blender.
- Blend the mixture until smooth.
- Pour the frozen mojito into a cocktail glass.
- Garnish with mint leaves and toasted coconut flakes, if desired.
- Serve immediately.
