Ingredients

  • 2 oz white rum
  • 1/2 cup canned light coconut milk
  • Juice of 1 lime
  • 2 tbsp mint simple syrup
  • 1 cup ice
  • Handful of mint leaves, for garnish
  • Toasted coconut flakes, if desired, for garnish

Instructions

  1. In a small saucepan, combine sugar, 1 cup water, and mint leaves. Bring to a boil, then let it cook for 10 minutes. Strain the mint and reserve the simple syrup.
  2. Once the mint simple syrup has cooled, add the rum, coconut milk, lime juice, reserved mint simple syrup, and ice to a high-powered blender.
  3. Blend the mixture until smooth.
  4. Pour the frozen mojito into a cocktail glass.
  5. Garnish with mint leaves and toasted coconut flakes, if desired.
  6. Serve immediately.
