Ingredients

  • 1/8 cup powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 2 tbsp coconut cream
  • 2 oz light rum
  • 3-4 ice cubes
  • Garnish (Fresh pineapple slices)

Instructions

  1. Create simple syrup by combining powdered monkfruit sweetener and water in a small skillet, heating until sweetener dissolves, and then setting it aside to cool.
  2. In a blender, combine the frozen pineapple, pineapple juice, coconut cream, rum, and 1/4 cup of the previously prepared simple syrup. Blend until smooth.
  3. While blending, gradually add the ice cubes until reaching the desired consistency.
  4. Taste the mixture and blend in additional simple syrup if desired.
  5. Pour the frozen pina colada into glasses, garnish with fresh pineapple slices, and serve immediately.
