Ingredients

  • 7 tablespoons caster sugar
  • 2 oz white rum
  • 2.50 oz pineapple juice
  • 1.60 oz coconut cream
  • Pineapple wedge, for garnish

Instructions

  1. In a pan, heat the sugar and 3.4 fl oz water gently until the sugar dissolves, then cool. This will make more syrup than you need, but it will keep in the fridge for a couple of weeks.
  2. In a blender, combine the white rum, pineapple juice, coconut cream, 2 teaspoons of the sugar syrup, and a small handful of ice. Blend until smooth.
  3. Pour the mixture into a piña colada cocktail glass and add more ice if desired.
  4. Garnish with a pineapple wedge before serving.
