Ingredients

  • 1 1/2 oz. white rum
  • 1 oz. blue curaçao liqueur
  • 2 oz. pineapple juice
  • 3/4 oz. cream of coconut
  • 1 Maraschino cherry, for garnish
  • 1 Pineapple wedge, for garnish

Instructions

  1. Slice the pineapple wedge and set it aside.
  2. If the cream of coconut is chunky, warm it in the microwave for 10 seconds and then let it cool.
  3. Fill a cocktail shaker with ice.
  4. Add white rum, blue curaçao, pineapple juice, and the cooled cream of coconut to the shaker.
  5. Shake the shaker vigorously for 30 seconds or until it becomes very cold.
  6. Fill a glass halfway with ice, using a daiquiri glass or a tall collins glass.
  7. Pour the cocktail into the glass.
  8. Garnish with the pineapple wedge and cherry.
  9. Serve immediately.
