Tropical Hibiscus Delight
A refreshing and tropical cocktail that combines hibiscus syrup, pineapple juice, and coconut milk for a delightful and vibrant flavor.
Ingredients
- 1.50 hibiscus tea bags or 1 Tbs. dried hibiscus flower
- 2 Tbs. sugar
- 2/3 cup pineapple juice
- 1 oz. white rum (optional)
- 2 Tbs. light coconut milk
- 1 pineapple slice, for garnish
- Fresh mint sprigs, for garnish
- Ice
Instructions
- Boil 1 1/2 cups of water and steep the hibiscus tea bags for 15 minutes. Strain the liquid and discard the tea bags.
- Transfer the hibiscus-infused liquid to a saucepan, stir in the sugar, and boil until the liquid is reduced by half.
- Place the hibiscus syrup in the freezer for 10 minutes until it becomes syrupy.
- Fill a glass with ice and pour in the pineapple juice and rum (if using).
- Add the coconut milk and drizzle the hibiscus syrup over the coconut milk.
- Garnish with a pineapple slice and fresh mint sprigs.
