Ingredients

  • 2-3 mint leaves
  • 2 tablespoons cream of coconut
  • 1/4 cup lime simple syrup (made with lime juice, zest, water, and sugar)
  • Club soda
  • Ice

Instructions

  1. In a saucepan, combine water, sugar, lime juice, and zest over medium-high heat. Heat until the sugar is melted, then set aside.
  2. Place mint leaves in the bottom of a glass and muddle them using the handle of a wooden spoon.
  3. Add 2 tablespoons of cream of coconut to the glass.
  4. Pour 1/4 cup of lime simple syrup into the glass.
  5. Fill the glass with ice and top it off with club soda.
  6. Garnish with a couple more mint leaves and enjoy!
