Ingredients
- 1/2 cup fresh pineapple chunks
- 1/4 lime, thinly sliced
- 5 mint leaves
- 1.50 oz white rum
- 0.50 oz triple sec
- 3 oz pineapple juice (chilled)
- splash club soda
- 1 tbsp sugar
- 1 tbsp tajin (Latin seasoning with lime and chili flavorings)
- for a sweeter cocktail: 0.50 oz simple syrup or agave nectar
Instructions
- In a small bowl, mix the tajin and sugar. Add a little water to one saucer, and then dip the rim of the glass into the water and then into the tajin mixture. Set aside.
- In a cocktail shaker or pitcher, muddle the pineapple, lime, and mint leaves until fragrant.
- Add the rum, triple sec, and pineapple juice. Stir or shake until well combined.
- Fill the glass with ice and pour in the drink. Top off with a splash of club soda.
- Garnish by affixing a chunk of pineapple and lime to the rim of the glass and float a mint leaf on top. Serve.
